We used to call that shiny iridescent stuff Peacock meat. Maybe not the most appealing in any way but it got the job done.

Sometimes when you take a knife to a fresh slab of roast beef to make your own sandwich meat, it will be iridescent immediately after it is cut. It’s fun to make jokes about it out in the brush, but I never got sick off it anyway.
